Easy Vegetable Fried Rice

Easy Vegetable Fried Rice Ingredients 3 cups cooked brown rice 1 10 oz. package frozen mixed vegetables (or 2 cups fresh vegetables, chopped) 1 small onion, finely chopped 2 eggs, lightly beaten 2 teaspoons olive oil 3 teaspoons low sodium soy sauce Directions 1. In a large pan, heat oil on medium-high heat. Add onion and rice. Stir and cook until onion is soft, about 5 minutes. 2. Reduce heat to medium and add vegetables to rice mixture. Cook 2 minutes for frozen vegetables and 5-7 minutes for fresh vegetables. 3. Spread the mixture out to the sides of the pan, leaving space in the middle for the eggs. 4. Add the eggs, and scramble until cooked firm. 5. Mix the eggs with the rice and vegetables, then sprinkle with soy sauce.

Tuna Salad Stuffed Tomatoes Ingredients 6   large   tomatoes 1/4   cup  of  nonfat plain Greek yogurt 20  ounces of  watered  tuna   canned   1/4   cup  of  fat-free mayonnaise 1/2   small   red onion cut into   dice 3   stalks  of  celery  hash ed 1   hardboiled egg   chopped 1  tablespoon of   Dijon mustard 2  tablespoons of   fresh parsley   minced 1  tablespoon of   sweet pickle relish salt and pepper   to taste Instructions Drain the tuna and rinse. In a large bowl, mix until well combined the tuna, mayonnaise, yogurt, relish, mustard, celery, onion, parsley, salt, and pepper. Put in the refrigerator during the tomatoes preparation. Prepare the tomatoes by cutting their tops. Then, remove seeds and core in order to form a bowl. Fill in each tomato with the tuna mixture...

Buffalo Chicken Salad Ingredients 1 cup Cooked chicken, shredded or chopped 1 stalk Celery, diced 1 stalk Green onion, chopped (optional) 1/2 cup Plain low fat Greek yogurt 1 tbs Franks buffalo sauce (or any hot sauce), or to taste 2 tbs Feta cheese, crumbled (or blue cheese) 1/4 tsp Garlic powder 1/4 tsp Onion powder Directions Combine all of the ingredients in a medium-small bowl. Stir until combined. Serve immediately, or chilled on toasted whole grain bread, a low carb/whole grain wrap, or just as it is.

Over the Moon Pizza Dip Cook time:  20 Min   Prep time:  5 Min   Serves:  15 or so Ingredients 1 3/4  lb Velveeta 1  lb ground beef 1  lb pepperoni, chopped fine 1  Tbsp onion powder 1  Tbsp dry Italian seasoning 1  Tbsp garlic powder 1  c marinara sauce Directions 1.  Brown the ground beef. Drain the fat. And set it aside. 2.  Over medium to low heat, render the fat out of the chopped pepperoni. Drain the fat and set this aside. 3.  Place the pepperoni and beef back in the skillet over low heat. Add the seasonings and marinara sauce. Stir to combine. Cut up the Velveeta into small cubes and add to the mixture. 4.  Stir until all is melted and combined. 5.  I like to then put this into a small (1 quart) size Crock Pot and keep it on low to serve. Serve with crackers, Scoops or whatever you like.

Peach Pretzel Jello Salad Ingredients Crust: 2 cups pretzels, crushed 3/4 cup (1 1/2 sticks) unsalted butter, melted 2 tablespoons sugar 1 tablespoon cinnamon 1/4 teaspoon nutmeg Filling: 2 cans peaches, drained, peaches pat dry 2 cups water, boiling 1 (8 oz.) container frozen whipped package 1 (8 oz.) package cream cheese, room temperature 1 (6 oz.) package peach jello 1/2 cup sugar Directions Preheat oven to 400ºF, and grease a 13×9-inch baking dish with nonstick spray. In a medium bowl, combine pretzels, sugar, cinnamon and nutmeg. Stir in melted butter, and mix thoroughly. Transfer pretzel mixture to baking dish, and gently press into an even layer. Crab Salad INGREDIENTS : 8 ounces imitation crabmeat 8 ounces fat free cream cheese 3/4 cup mayonnaise 1/4 cup celery, finely chopped 1/4 cup green onion, finely chopped 2 tablespoons lemon juice Directions: Blend cream cheese, mayonnaise and lemon juice. Chop crab meat into bite size pieces. Add remaining ingredients and mix well. Serve cold.

Daddy’s Potato Salad Ingredients: 5 -6 large potatoes 1/2 to 3/4 C. mayo 1 T. yellow mustard 2 hard boiled eggs, chopped 1/4 C. chopped celery 1/4 C. sweet onion, chopped (I prefer a sweet, he likes a red onion) 1 small jar pimentos, drained (I was out of this so I used 1/4 C. diced red bell pepper) 2 T. chopped dill pickle (optional but good) salt and pepper to taste paprika Directions: Wash and peel the potatoes, cut them into cubes and cover with water. Boil until just tender, drain and rinse with cold water to stop the cooking process. Add in the onions, eggs, pimentos, celery and pickles. Gently stir together and add in the mayo 1/2 C. to start, then add more if desired. Add mustard, salt and pepper to taste. Stir to combine. Place in a serving dish and sprinkle the top with paprika. Serve warm or keep in fridge till ready to serve.

SIMPLE AND SAVORY TRADITIONAL GERMAN CUKE SALAD Ingredients : 2 large cucumbers 1 medium onion 1 teaspoon Morton salt 1/4 cup Daisy sour cream or yogurt 3 tablespoons Heinz apple cider vinegar 1 teaspoon Domino sugar 1/4 teaspoon Morton salt 1/8 teaspoon fresh ground black pepper 1 tablespoon chopped fresh dill Fresh dill fronds for garnish Instructions : Peel the cucumbers and cut in half lengthwise. Use the tip of a spoon to scrape out and discard the seeds. Slice the cucumbers into inch slices and place into a colander. Peel the onion, slice it in half lengthwise and then crosswise into thin half-moons. Place into the colander with the cucumber and sprinkle with the salt. Let stand for 15 minutes, stirring a few times. Tip out onto paper towels and blot dry. Meanwhile in a medium bowl, combine the sour cream, vinegar, sugar sand and pepper and stir. Macaroni-Ham Salad As a self proclaimed “foodie”, I have to admit that I love a good potluck. Ever since the days when I worked the normal 8-5 office job, I always looked forward to them. Trying other peoples favorite dishes, exchanging a recipe or two. I love it! I think potlucks and pasta salads should be synonymous. By the end of a potluck there’s more than a few macaroni salads sitting at the serving table. This salad though, is guaranteed to always be the star of the show. One weekend a few years ago we had a barbeque at our house and invited quite a few of our friends and family over. It was a potluck, so everyone was bringing a side dish to go with the barbequed meat. Yes, we had about 3 pasta salads at this particular event. But one of my friends brought this salad with her. It was amazing! I couldn’t stop thinking about it, and a week or so later I emailed her asking for the recipe. I was shocked at how simple it was. The following 4th of July we had a few friend...
