LOADED POTATO SALAD

 
This recipe has all the ingredients of a Loaded white potato, together with cheese, bacon, eggs and bitter cream!


LOADED POTATO SALAD

3 pounds medium-size Yukon Gold potatoes or baby reds
8 slices bacon, baked crisp and broken
4 giant poached eggs, sliced
1 cup soured cream
1/2 cup mayo
2 teaspoons yellow mustard, or additional to style
1 teaspoon every salt and black pepper, or to style
2 teaspoons distilled white vinegar or pickle brine, or additional to style (optional)
2 cups sliced white or yellow cheese
4 scallions, trimmed, white and inexperienced components thinly sliced
Paprika for serving
Fresh parsley for serving
